Salted Caramel Ding Dong Cake

Ingredients

For the cake
    • 1 cup natural unsweetened cocoa powder
    • 4 oz semisweet or bittersweet chocolate, chopped
    • 1 cup hot strong coffee
    • 3/4 cup buttermilk
    • 1 1/2 tsp vanilla extract
    • 2 cups cake flour
    • 1 tsp baking powder
    • 1 tsp baking soda
    • 1 tsp kosher salt
    • 2 cups sugar
    • 1 cup unsalted butter, room temperature
    • 3 large eggs
For the caramel ganache
    • 9 oz semisweet or bittersweet chocolate, chopped
    • 1 1/8 tsp kosher salt
    • 1 cup sugar
    • 1 1/2 cups heavy cream
    • 1 tsp vanilla extract
For the filling and assembly
  • 1 1/4 tsp unflavored (kosher/vegan) gelatin
  • 1 1/2 cups chilled heavy cream
  • 1/2 cup powdered sugar
  • 1 tbsp vanilla bean paste
  • flaky sea salt
