Chocolate Covered Strawberry Eclairs

Ingredients:

For Pastry Cream:

  • 1 3/4 cups whole milk
  • 2 large eggs
  • 1 large egg yolk
  • 2/3 cup (5 ounces) granulated sugar
  • 1/3 cup fresh strawberry purée
  • 1/4 cup cornstarch
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1-2 drops red food coloring (optional)

For Eclairs:

  • 1/4 cup milk
  • 1/4 cup water
  • 1/8 teaspoon salt
  • 1 teaspoon granulated sugar
  • 1/4 cup (1/2 stick) unsalted butter
  • 1/2 cup all-purpose flour
  • 2 large eggs

For Chocolate Glaze:

  • 4 ounces bittersweet chocolate, shaved or finely chopped
  • 1 tablespoon light corn syrup
  • 1/2 cup heavy cream
  • crushed freeze-dried strawberries (optional, for garnish)
