Mozzarella Stuffed Turkey Quinoa Meatballs

Ingredients
For The Meatballs:
  • 1 lb lean ground turkey
  • 1 cup cooked quinoa, cooled
  • 2 garlic cloves, minced
  • 1 egg
  • ¼ cup chopped red onion
  • ¼ cup Panko bread crumbs
  • ⅓ cup grated Parmesan cheese
  • ½ teaspoon red pepper flakes
  • 1½ teaspoons dried basil
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black ground pepper
  • mozzarella, cut in small cubes
For The Sauce:
  • 2 tablespoons unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 cup low-sodium vegetable broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon honey
  • 1 teaspoon mustard
  • ¼ cup heavy cream
  • salt and freshly ground black pepper, to taste
  • chopped fresh parsley, for garnishing (optional)
