Mexican Lasagna Recipe



  • 2 tablespoons canola oil, divided
    1 package ground chicken or chicken breast, or ground turkey or turkey breast (about 1 1/4 pounds)
    1/2 cup chopped onion
    1 can (4 ounces) mild chopped green chilies
    Salt and ground black pepper, to taste
    1 can (14 ounces) enchilada sauce
    12 6-inch corn tortillas
    1 package (8 ounces or 2 cups) shredded Mexican cheese
    Sour cream for garnish, optional
    Chopped fresh cilantro for garnish, optional
